#MeatlessMonday Part Deux

Guys, full transparency: I completely forgot about Meatless Monday last week. I’m pretty sure I ate dumplings or salami slices or whatever was in my tupperware.

In the immortal words of Pinterest — Fall down seven times, stand up eight.

Which means I’ve got six more Meatless Mondays to forget!

But I actually remembered today. So let’s see, I had:

  1. Pumpkin bread and a caramel macchiato Sugar for breakfast.
  2. Gardein Chick’n Sliders for lunch.
  3. And for dinner, all the meatless leftovers in my possession.

This might be the saddest plate I’ve ever seen, but it would look exactly the same if it contained meat.

But it doesn’t.

So you know…I feel pretty good about myself.
