Probably should have saved this one for Meatless Monday, but it was the weekend, I looked in the freezer and there it was in all it’s pre-cooked glory.
Veggie Latin from Boulder, Colorado. Tres Pupusas. An impulse buy from probably Whole Foods/maybe Wegmans.
I had a quarter head of Napa cabbage in the fridge, so I shredded it and mixed it with the things I believe go in slaw. Onions, oregano, apple cider vinegar, and water.
10 minutes to pan fry the “pupusas” while the “slaw” marinated. A wayward splash of poblano Cholula. Boom.
Air quotes aside, it actually turned out pretty okay. And Meatless Sunday was poppin.
Guys, full transparency: I completely forgot about Meatless Monday last week. I’m pretty sure I ate dumplings or salami slices or whatever was in my tupperware.
In the immortal words of Pinterest — Fall down seven times, stand up eight.
Which means I’ve got six more Meatless Mondays to forget!
But I actually remembered today. So let’s see, I had:
Pumpkin bread and a caramel macchiatoSugar for breakfast.
- Gardein Chick’n Sliders for lunch.
- And for dinner, all the meatless leftovers in my possession.
This might be the saddest plate I’ve ever seen, but it would look exactly the same if it contained meat.
But it doesn’t.
So you know…I feel pretty good about myself.
